I’d like to freeze some columns in a table so that they stay visible while scrolling. Is it possible ?

It is possible to freeze columns or rows in a table using the Freeze Panes option available in the Sheet View. You must have the Configure View permission to save these modifications. You can access this functionality by navigating to the View menu in the Sheet View toolbar, see below:
