If we restore an application, can we play around with the Analyst AI/Modeler AI in the recovered application in silo so that we can have a test environment to learn how to use the AI agents and to work on new features?

You can safely try this in your live model to see how it works as the agent will not apply any changes unless you explicitly review and approve them first.
If you’d prefer a safer environment, AI agents are also supported in recovered applications.
